Ingredients

  • • 1 KG of large eggplants.
  • • 3/4 a teaspoon of salt.
  • • 3 tablespoons of lemon juice.
  • • 1/2 a cup of tahini.
  • • 1 tablespoon of water.
  • • Olive oil.

Methods

Step 1

• Grill the eggplants in a hot oven until they become cooked, leave them until they cool then peel them and then mash them with fork.

Step 2

• Add salt, lemon and tahini until the moutabal become homogeneous.

Step 3

• Put moutabal in the serving plate and decorate it with olive oil and parsley.
