Ingredients

  • • 8 cups of flour.
  • • 1 tablespoon of baking powder.
  • • A sprinkle of salt.
  • • 1 teaspoon of cardamom powder and a clove of carnation.
  • • 1 tablespoon of cinnamon powder.
  • • 2 1/2 a cup of butter.
  • • 2 cups of sugar.
  • • A grated peel of 1 sour lemon.
  • • 3 shaken eggs.
  • • 1 egg yolk, shaken with a tablespoon of water.
  • • 1/2 a cup of halves of the peeled almond.
  • Almond Mash • 4 1/4 a cup of peeled and grinded almond.
  • • 1 1/2 a cup of sugar.
  • • A grated peel of 1 sour lemon.
  • • 2 shaken eggs.

Methods

Step 1

• Put flour, baking powder and salt in a plate and mix them well.

Step 2

• Divide cold butter with knife into small cubes.

Step 3

• Add butter to the mix of flour and then mix it with knife that is allocated to the biscuit dough until the mix becomes like bread crumbs.

Step 4

• Add sugar, lemon peel and spices to the crumbs and stir the mix with a fork or a knife.

Step 5

• Add shaken eggs and then stir the mix with a fork until the dough becomes homogeneous.

Step 6

• Collect the dough with hands, and wrap it with aluminum foil, then put it in the fridge for 2 hours.

Step 7

• Prepare the almond Mash, mix the grinded almond with sugar and grated lemon peel.

Step 8

• Add shaken eggs gradually to the almond, and mix it with fork, then knead with your fingertips until the almond absorbs the egg, and then knead with your hand until the almond dough becomes solid.

Step 9

• Sprinkle a little of flour on the marbled surface, divide the almond dough into balls, and then roll every ball over the flour like a stick shape with a diameter of 2cm.

Step 10

• Sprinkle a little of flour on the surface and laminate the dough lightly like an oblong with a thickness of carton paper (1/2 a cm).

Step 11

• Divide the dough oblong into small oblongs with a length of 10cm and a width of 5cm.

Step 12

• Wipe the surface of the oblongs with the mix of eggs and water with a special brush.

Step 13

• Put the fingers of almond Mash on the oblongs and wrap every oblong around the finger of almond Mash and press on the dough's footnote to stick the sides of the finger.

Step 14

• Heat the oven to 350 degrees Fahrenheit and paint the tray with butter, then row the fingers in a way that the footnote is put from the bottom, i.e on the tray.

Step 15

Separate the fingers on each other to avoid the adhesion of them while baking., then paint the surface of the fingers with eggs and water mix.

Step 16

• Decorate the fingers with almond, then paint them again with the water and eggs mix.

Step 17

• Bake the fingers in the oven for 20 minutes then pass a side of a knife under the fingers, and then leave the fingers to cool in the tray, and then divide the fingers into slices and serve them.
