Kstelith sheep with rice

2 tablespoons butter

2 cups rice

onion, Finely chopped

4 cups water

Teaspoon salt

Cube chicken broth

1 tablespoon vegetable oil
1 kg lamp meat” Kstleth” (lamb’s ribs).

3 medium onions

2Tablespoons white vinegar.

Salt and Pepper.

crusty thyme.

vegetables ( to taste).

1 tablespoon flour.


Heat the butter in a small saucepan over medium heat, then add rice and onion with stirring until brown. Add water and the rest of ingredients to the pot and heat over high heat until  boil then reduce heat and simmer for 20 minutes.

Brown the meat with oil over medium heat.place the meat in a dish with the remained oil fry onion then place the meat back over the onion.

Add vinegar, salt, pepper, thyme, and 1/2 cup of hot water. Reduce heat and simmer for one and half hour until the meat be softened. Add the vegetables and increase the heat , when it starts to boil reduce heat and simmer for 10 minutes .

In a cup mix flour with 2 tablespoons of water then pour  it in bunches to the meat with stirring.

Cook until the sauce be thicker then it’s ready for serve. Serve it with rice.
