1 kg aubergines.

1/2 kg meat, minced.

1/2 teaspoon cumin.

1/2 teaspoon black pepper.

1 onion, chopped.

2 garlic cloves.

1/2 bunch parsley.

3 bread slices.

1 egg.

1 kg yogurt.

1 small cup vegetables oil.

1 teaspoon paprika.

For bread:

1/2 kg flour.

100 g yeast.

1 teaspoon sugar.

1 teaspoon salt.


Peel aubergine and don’t remove the tops. Roast the aubergines in an oven then place it on water with lemon.

In another pot add meat and the rest of ingredients and blend well then cut the meat dough into pieces in the same number of aubergines number.

Raise the roasted aubergines from water and drain then place it over a towel. Then roll the aubergines by a dough pieces except the tops then arrange them in over a baking dish.

Bake over a preheated oven ( 180 degrees C) and cook until it slightly brown.

To prepare bread:

Pour hot water in a pot then add yeast, salt, and sugar and wait a few minutes. the sprinkle flour slowly over it and dough this ingredients until getting a soft dough, then set it aside.

After the dough be ready . heat a saucepan over medium heat and roll out the dough over it and slightly brown it from the two sides.
