Knafeh | Knafeh Fingers with Walnut

  • • 1/2 a kg of ottoman filaments.
  • • 1 cup of ghee or sweet butter.
  • The stuff: • 1 cup of finely minced walnut.
  • • 1 cup of peeled and finely minced almond.
  • • 1/2 a cup of sugar.
  • • 1/4 a cup of blossom water.
  • The syrup: • 3 cups of sugar.
  • • 1 cup of water.
  • • 1 teaspoon of sour lemon juice.
  • • 1/4 a cup of blossom water.


Step 1

• Bring a medium tray and paint the bottom of it with ghee.

Step 2

• Prepare the syrup and set it aside.

Step 3

• Put the ottoman filaments in a tray on a backburner.

Step 4

• Sprinkle ghee on the ottoman filaments and then dismantle these filaments with your hand fingers from each other until the filaments absorb the ghee while flipping them on the backburner, then raise the tray from heat.

Step 5

• Mix the stuff well.

Step 6

• Take a small lock of filaments and spread it on the surface equally.

Step 7

• Pour 2 tablespoons of the stuff on the short side of the lock, then wrap the ottoman filaments carefully over the stuff like a cigarette, then row them in the tray that is ready for baking.

Step 8

• Sprinkle a little of ghee over the ottoman fingers and bake these fingers in hot oven (220 Degrees Celsius) for 15 minutes or until the fingers color becomes golden.

Step 9

• Pour cold syrup over the pieces and set them aside.

Step 10

Preparation of the syrup: • Melt sugar in water, then add lemon juice and stir. Leave the syrup to boil for 3 minutes, then add blossom water and raise it from heat.
