2 tablespoons butter.

1 onion, chopped.

1 garlic clove, minced.

3 cups of frozen corn.

8 cups chicken or meat broth.

Salt and pepper.

1 cup cream.

Parboiled chicken, chopped.

Red capsicum, diced.


Melt butter in a pot add onion and garlic with stirring for 5 minutes.

Place frozen corn over boiling water and boil it for 5 minutes before use then drain and add it to onion mixture and stir for 5 minutes.

Add broth and season with salt and pepper and heat it until it starts to boil.

Reduce heat and simmer  10 minutes with stirring occasionally, remove from flame and let it cool.

Put half of the mixture in an electronic blender  and blend then repeat the step for the next half.

Heat the soup over medium heat add cream, some frozen corn, and chopped chicken. Stirring until it starts to boil, adorn with red capsicum and corn.
